– 1 cup stone-ground grits
– 4 cups water or chicken broth
– 1 cup shredded cheddar cheese

– 1 small onion, diced
– 1 bell pepper, diced

– ½ cup butter
– ½ cup all-purpose flour
– 1 large onion, diced
– 1 large red bell pepper, diced
– 2 stalks lemongrass, white parts minced
– 3 cloves garlic, minced
– 1 ½ cups chicken broth
– 2 tablespoons tomato paste
– 2 teaspoons sambal or hot sauce
– 1 pound large shrimp, peeled and deveined
